Our spirits start life as a 50:50 malt wheat and malt barley mash piped straight from our brewery.

We then start distillation in the world's only triple bubble still. Allowing massive copper contact and resulting in a 91% ABV hi-wine.

The spirit passes through the lampglass still before heading into the 60 plate, 18 metre rectification column.

The higher it goes the purer it gets and the higher the ABV - ending in a 96.4% vodka. Our master distiller gets to the heart of the spirit, discarding the heads and tails.

The pure spirit is transferred into the column to ensure any residues of methanol, diacetyl or aldehyde are removed. And a single carbon filter gives total purification.

Our pure vodka is diluted with de-ionised water to 40% ABV and laid in tank for 4-5 days. Only then does our gin journey begin. 

Through an exacting process of science and craft, we add our botanicals.

We infuse juniper, coriander seeds, angelica root, cardamom, pink peppercorn, Thai lemon grass, Kaffir lime leaf, mace, almond, fresh lemon peel, fresh pink grapefruit peel, lavender, orris root and Scots pine needles in our gin.  

Only then are our native sons ready to be released into the world.
